This dish in one word can be described as an Indonesian fried rice served with fried egg (sunny side up), some prawn crackers and fresh salad. This type of fried rice can be made within 15 to 20 mins as long as you have some leftover rice , boiled chicken, prawn or both on your freezer and trust me it taste better with leftovers. 🙂
My love for rice have inspired me to taste and cook many varieties of fried rice, as far as my limited knowledge of reading and tips while travelling permitted .
This rice dish is distinguished from other fried rice for its aromatic earthy flavour which comes from Indonesian sweet soya sauce (Kecap Manis) , but I was unable to get hold of one, so in this recipe I used Hoisin Sauce —- thick pungent chinese sauce and it worked well with this rice, after all cooking is all about experimenting.
Star Ingredient:
Fish Sauce and Hoisin Sauce
Main Ingredients :
- Leftover Rice 2 to 3 medium-sized bowls
- Some shredded and boiled chicken and prawns
- 2 teaspoon of fish Sauce
- 4 teaspoon of hoisin Sauce
- 2 teaspoon of shrimp Paste
- 2 teaspoon of sambal Sauce ( Red chilli Sauce )
- Salt to taste
- Sunflower oil 4 to 5 teaspoon
- Egg 3 to 4 depending upon the members to serve.
- Prawn Crackers
- One sliced onion and 6 to 7 gloves of garlic together roughly grinded
- Vegetables used : Sliced Carrot, beans and cabbage
Method:
This dish has to be prepared on high heat . Heat some oil in a wok , put in the grinded onion and garlic paste. Saute a little bit , add in all the vegetables , fry for sometime , then add the prawns and the chicken. Stir in high flame .
Then when the vegetables gets half-cooked , add in all the sauces together with the rice. Adjust the seasoning. Stir fry for another 2 to 3 mins and your Indonesian fried rice —– Nasigoreng is ready to eat. 🙂
Garnishing:
Garnishing plays and important role in this dish . Put some rice on the serving plate. Fry an egg and place it on top of the rice (sunny side up). On the side decorate it with some prawn crackers and fresh salad and surely your family would like to have it for lunch or dinner once in a while .
