It is a simple version of baked chicken but this recipe is without any oil or butter making it more healthier and those who are looking out for low cal food — this can be definitely a good choice —
It is super easy to make in your kitchen– you only have to keep the ingredients ready at your hand and you are ready to get set and go— π
Ingredients:
- 2 chicken breasts
- 1/2 cup of vinegar
- some red chilli flakes
- 1/2 tsp of black pepper
- some pounded coriander seeds (indian touch)
- 2 tsp of soya sauce
- 2 tsp of stir fry sauce
- 2 tsp of red chilli sauce
- 2 tsp of honey
- salt according to taste
- 1 cup of baby spinach
- 1 tsp of crushed garlic
Method:
This recipe requires two steps of marination–
First marination:
Wash and clean the chicken pieces — pat them dry —
Coat them with vinegar pounded , salt coriander seeds, red chilli flakes and vinegar — keep it for 30 minutes
Second marination:
Add soya sauce , red chilli sauce , black pepper , stir fry sauce and honey in the same glass bowl. Coat the chicken pieces well with the marinade — leave it for further 1 hour on kitchen top counter .
Heat a non-stick grill pan on high heat .
Place the pieces and then lower the heat — Grill it for 5 to 6 minutes on each side —
Meanwhile preheat the oven to 180 degree centigrade .
Place the grilled chicken pieces along with the leftover marinade in an oven proof dish and bake the chicken for further 45 minutes .
Let it cool .
Heat another pan ( without any oil) add in baby spinach along with the crushed garlic and some salt — — it will wilt in a few seconds — remove it from the pan.
Serve baked chicken along with some spinach , add a dash of lemon on top of it garnish it with some pomegranate seeds — and tell you what this is one of the most healthiest recipe that you can ever have at home. π
