Kesari Phirni

To start with Phirni is the easiest sweet dessert that one can make and an ideal dessert dish to try for a beginner.


This is a type of rice pudding , prepared with soaked and  then grinded  raw rice paste, full cream milk , sugar and cardamom powder.

Various types of phirni’s are there , to name a few —  kesari phirni (showcased here), mango phirni, rose phirni, chocolate phirni and the list goes on —

This creamy rice mixture is set in earthen pots , which is then garnished with nuts like pistachios and almonds. This creamy dessert is made in India by Hindu and Muslims to celebrate festivals like —  Holy, Eid and Diwali,  and today I  thought of preparing  since  we are celebrating  Bengali new year (poila baisakh  🙂

Star Ingredient : Kesar (Saffron)


Serves  6 to 7 people

Main Ingredients :

  • 1 cup rice soaked for an hour or so
  • Milk ( full cream) one and a half litre
  • Sugar 2 cups
  • Cardamom powder ( pinch)
  • Nuts to garnish (Pistachio)

Method :

Soak the rice with water for an hour .  Bring  the milk  to a boil in a heavy bottomed vessel  . Meanwhile grind the rice to a coarse mixture paste and then add this to the milk together with sugar.

Keep on simmering the milk on low flame , till it is reduced to 3/4 of its original quantity. Keep on stirring , since it will have a tendency to stick to the bottom. Take few strands of kesar and dissolve in half cup of milk.


At the end add kesar and cardamom powder.

After the phirni  is done, transfer the kheer  to earthen pots and chill it in a freezer , till it gets set.

Garnish it with nuts and rose petals , your creamy phirni is ready to eat. 🙂
